Loaded Frito's Bowl

Kai | San Quentin Rehabilitation Center
While walking through the day room the other day, I saw a flyer from you asking for people to share their recipes. Since cooking is one of my greatest passions in life, I felt compelled to write and send a recipe of my own. My love and interest in cooking definitely came from my mother, because when I was a kid, it seemed like all she did was cook. Every day when my sister and I would come home from school, it seemed like our house would smell like either a bakery or a restaurant. To this day, whenever I smell barbecue chicken, grilled onions, and bell peppers, it reminds me of my mother (God bless her soul). The recipe I would like to share with you is something I like to call “Kai’s Straight Up East Oakland Loaded Frito’s Bowl.” This has been one of my favorite meals to prepare for years because it’s quick and easy to make, and you don’t need to be a Gordon Ramsay to prepare a delicious meal that everyone can enjoy.

  • 1 can Campbell's Red Beans drained
  • 1 bag Velveeta Shredded Cheese

  • In a large skillet over medium heart, cook the ground beef and diced onions until the meat is browned and the onions are soft. Drain excess grease.
  • Add the Campbell's Tomato Sauce and Campbell's Red Beans to the skillet with beef and onions. Stir well and let simmer on low heat for 10 minutes.
  • Warm up the Home Town Spicy Refried Beans in a saucepan or microwave until smooth and hot.
  • Assemble! Put Frito's in a large bowl and pour in meat, beans, and cheese. Enjoy!
