
Idalio's Pollo Encremado (Creamy Chicken)
Today I am going to talk about the Pollo Encremado meal my mom cooks. It translates into English as creamy chicken. I still remember the delicious aroma of fried onions lingering all over the house and part of the street. It reminded me of the cartoons, when the character would smell food, they levitated toward the kitchen where mom was cooking. I remember when I was a little kid and I would see my mother cooking with her delantal on, her apron, slowly stirring the pollo inside the pot on top of the firewood's sizzling fire. My mom would show up with my plate with a piece of creamy chicken and white tasty rice and sauteed onion on top of a romaine lettuce bedding. Wow, I would eat my chicken so slowly to enjoy every second of my meal. It is economic while high class in appearance and taste. It is a meal for the Gods in the Olympus.
Ingredients
- 1 lb Chicken white or dark meat, your choice
- 1 oz Sour Cream
- 1/4 lb Rice
- 1 slice Avocado
- 1 small Onion
- 3 grams live oil
- 1 Slice red bell pepper
- Romaine lettuce for bedding
- Black or green olives
- Cilantro leaves
- Salt to taste
Instructions
- Heat pot to 225 degrees with olive oil.
- Add the chicken and lower temperature to 150 degrees.
- Once hot, add half of the onion and fry until golden brown.
- Let it roast for twenty minutes until it is cooked all the way.
- Once the chicken is cooked, lower the temperature to 100 degrees to keep it hot.
- Cook the rice, one cup of rice to two cups of water, at 200 degrees.
- Once the rice is cooked, add the other half of the sauteed onion to the chicken pot, pour in the sour cream and stir thoroughly.
- Lay the white rice on a lettuce bedding on a large luxurious plate and lay the pollo encremado in the middle. Add cilantro leaves, sliced red bell pepper and one black or green olive on top of the onion.
- Enjoy!
