
Klarissa's Quesadilla Salvadoreña
As requested, I’m attaching a recipe for a dessert I grew up eating. It’s a part of my culture and childhood, and it always brings me the warm fuzzies when I eat it. I can’t wait to get home and have it again. I hope y’all get to try it and fall in love with it like I did. Ingredients
- 1 cup granulated sugar
- 1 1/2 cups and 1 1/2 tbsp all-purpose flour
- 3/4 cup sesame seeds
- 1 stick unsalted butter, room temperature
- 3/4 cup and 3 tbsp crema salvadoreña
- 1/2 cup and 2 tbsp grated queso salvadoreño
- 3 tbsp whole wheat flour
- 1 tbsp baking powder
- 1 1/2 tsp kosher salt
Instructions
- Preheat oven to 350°F and spray a 9-inch cake pan with nonstick cooking spray.
- In a small bowl, mix 1 Tbsp of granulated sugar, 2 tsp of all-purpose flour, and the sesame seeds.
- In a mixing bowl, beat the remaining granulated sugar and butter on medium speed until creamy (about 2 minutes). Add the eggs one at a time, mixing well after each.
- In a separate bowl, mix the queso and cream together and set aside.
- In another bowl, whisk together the remaining all-purpose flour, whole wheat flour, baking powder, and salt.
- Add the flour mixture and queso mixture to the batter, alternating between them and beginning and ending with the flour. Mix until smooth.
- Pour the batter into the prepared pan and top liberally with the sesame seed mixture.
- Bake until golden brown and mostly set but still slightly wiggly in the middle, about 40 minutes.
- Remove from the oven, let cool before serving. ☺️
